Roasted Vegetable Medley

In this recipe we showcase a recipe we use very often as a side to chicken or turkey. We show you how we make our roasted beet, cauliflower and carrot medley. A very good option for those low point meals since it is 0 points. What vegetables do you like roasted?

  • Beets

  • Carrots

  • Cauliflower

  • Olive Oil Spray

  • 2 tbsp Minced Garlic

  • Garlic Powder

  • Clubhouse Garlic Plus

  • Clubhouse Roasted Pepper Garlic

  • Clubhouse Parmesan & Herbs

  • Sriracha

  • Basil


Note: You can choose any of your favorite vegetables like brussel sprouts or broccoli.

  1. Take all of the vegetables and diced them into small cubes.

  2. Put the vegetables in a bowl and mix it up. 

  3. Spray with olive oil and add sriracha to taste. 

  4. Include 2 tablespoons of minced garlic, and all spices (to taste).

  5. Mix well.

  6. Spread evenly on a baking sheet. 

  7. Bake at 400F for 25 minuntes

  8. Pull out of oven, stir the medley.

  9. Roast another 20 minutes or until cooked.
